Chicken Soup in The Instant Pot

This soup is the ultimate rainy day, comfort soup. When any of us are feeling under the weather, I make this soup and the best part about it is that it sets you up to be able to make three different meals. You didn’t read that wrong… I seriously make three meals from this one whole chicken. I will post those recipes here too :)

This recipe is Paleo, Whole30 and gluten free.

    Tools:

    Instant Pot

    Ingredients:

    • 1 whole chicken

    • 1Tbsp sea salt

    • 1 tbsp Italian seasoning

    • 4 carrots diced

    • 3 stalks of celery diced

    • 1 onion diced

    • 1 knob of ginger sliced

    • 10 cloves garlic smashed

    Directions:

    Put all ingredients into the Instant Pot and then fill with filtered water to the max fill line.

    Set Instant Pot to manual pressure for 15 minutes.

    When it finishes, allow for at least 10 minutes of natural pressure release.

    Remove chicken and allow to cool.

    Shred chicken and add half the meat to the soup.

    Save the other meat for another recipe and save the bones for chicken broth.

    Enjoy!
